牛番茄5-6顆
豬絞肉250g
蝦肉120g
茡薺切碎30g
細砂糖2茶匙
醬油2大匙
清湯半杯
調味料
米酒1大匙
鹽1/2茶匙
醬油1大匙
白胡椒粉少許
芡汁
藕粉/太白粉1茶匙
清水2茶匙
作法
1 剁碎的蝦肉、絞肉和[調味料]揉拌出黏性,加入茡薺拌勻。
2 番茄在滾水內燙5秒,撈出泡冷水剝皮,直切對半,挖空備用。
3 番茄內撒抹少許藕粉,撒入肉餡。

4 熱鍋熱1/4杯油,將番茄肉面向下,放入鍋內煎至焦黃。
5 將煎好的番茄鑲肉排列在碗中,肉面朝下,淋入醬油、糖和水。

6 電鍋外鍋一杯水,將番茄鑲肉放在電鍋中蒸熟。
7 蒸好後先將湯汁倒入鍋內,加入混和好的[芡汁]。
