用一點點藍姆酒提升香氣,但不會有酒味,感覺像是獨門秘方!
蛋糕做好要蓋著烘焙紙放在保鮮盒中,可以保持溼潤
冬天常溫保存三天,冷藏保存七天。我家是兩天就吃完啦(笑)
食譜是參考「星期天的烘焙時光」p190「柳橙蜂蜜蛋糕」
食材(20cm*20cm方型模具1個)
雞蛋3顆
蛋黃1顆
細砂糖110g
蜂蜜16g
低筋麵粉92g
蘭姆酒1大匙
無鹽奶油36g
鮮奶18g
作法
1 模具中抹上一層薄薄的奶油,鋪黏上裁剪好的烘焙紙。
無鹽奶油和鮮奶微波至溫熱融化。烤箱預熱至170度。
3 準備一鍋溫水(55度左右),以隔水加熱的方式攪打蛋液,幫助砂糖融化和雞蛋打發的程度。
