肥瘦適中的豬絞肉調味揉捏至有黏性,捏成球狀後過油鎖住肉汁,
獅子頭肉丸和蹄筋一起燉煮,讓軟嫩充滿膠質的醬汁包裹著肉丸♪

食材
蹄筋半斤
蠔油三大匙
米酒兩大匙
豬高湯300ml
青江菜(裝飾用)3-5小棵
肉丸
豬絞肉一斤
蝦米一大匙
乾香菇三朵
蔥花一大匙
荸薺200g
醬油一大匙
鹽和白胡椒粉各半茶匙
作法
1 將肉丸材料混合,揉捏摔打直到產生黏性,靜置備用。
2 蹄筋切成5公分段狀,川燙一分鐘後取出備用。
3 以中火熱一油鍋,同時來製作肉丸。
取網球大小的份量,雙手來回拋接成型,同時沾取一些太白粉水來包裹肉丸。
4 將肉丸小心的放入油鍋中,等到底布上色焦香,用鍋鏟將肉丸翻面。
5 將兩面都煎至金黃焦香撈起備用
6 將肉丸和蹄筋放進沙鍋中,加入調味料和高湯,加蓋以中火煮滾後
轉小火煮1-2小時,中途如果水量太少再斟酌添加熱過的高湯。
7 煮一小鍋水,滾後加入兩大匙的油, 川燙青江菜後與紅燒獅子頭盛盤。
軟嫩多汁的紅燒獅子頭滋味濃郁油潤,以潘朵拉頂級紅酒佐餐,
