在台灣要嚐到中國八大菜系之一的道地揚州菜,好像機會少了些,不過即日起至6月23日台北威斯汀六福皇宮邀請上海威斯汀大飯店的陳嘉琪主廚擔任客座主廚,在留園上海料理餐廳為饕客們呈現一道道刀工細緻、保有食材原味的揚州料理!
席間帥氣又健談的陳主廚特別與我們分享揚州菜的特色,像是除了各類肉品入菜之外也大量使用河鮮、豆製品,調味與火侯都十分講究,而菜色不只是口感講求鮮香,更要展現細膩的刀工與精緻的擺盤,追求淡雅的口味更是貼近台灣人喜好!
陳主廚遠道而來,還把當地能夠進入台灣的食材、醬料一一蒐羅,想原汁原味的呈現揚州菜的精髓,先上桌的三道冷菜像是蜜汁醬鴨、福祿元寶蝦、雪菜香油墨魚就滋味豐富各有特色,稍稍縮小尺寸的獅子頭調整了肥瘦比例,主廚還分享了在表面蓋上白菜,取其增加甘甜也吸取過多油脂,加入蟹粉清燉、湯清肉嫩的吃法是主廚推薦的道地傳統口味!
當然還有講求綿細刀工的老菜文思豆腐湯、台灣難得吃到的雞湯火腿清蒸鰣魚,我也很喜歡這道顛覆干絲只是麵攤上小菜的大煮干絲,味道鮮美的湯汁直讓人想撈碗麵吃哪!
好菜很多,但活動時間卻不長,想嘗鮮可得把握時間,不然主廚就回上海去囉!
