咖啡鮮奶饅頭簡單做入門篇
材料:
1.中筋麵粉 300g(或3碗)
2.砂糖 15g
3.快乾酵母粉 5-7g
4.水或鮮奶(全脂味道較棒) 150g(CC)
5.鹽巴微量 (1/4匙)
6.油 一匙(芥花油或橄欖油都可以)
7.手粉或少油(避免揉製麵糰過程中,黏手備用的)
8.三合一咖啡粉 約15g

製作方法:
1. 將麵粉及砂糖堆成粉牆;酵母和水混合溶解後倒入粉牆中,攪拌成糰(呈雪片狀即可沾手油或手粉揉成糰)。(全程只用一雙筷子即可完成)
(可加入適量的老麵糰一起發酵,吃起來的口感更Q更有嚼勁噢!)

2.蓋上保鮮膜發酵30分鐘,冬天所需時間更長(或可放電鍋內保溫發酵),待比原來大1~2倍大後取出。

3. 將麵糰取出後揉至光滑(沒有壓麵機,可用手力來回壓個200下),再擀成長方型薄麵皮約(03.cm厚)捲成長條狀(要捲緊不要有空隙以免口感不佳)
(盡量要把麵糰裡的空氣給擠壓出來噢~以免影響口感)

4. 用刀將麵糰分割成自己喜愛的大小,放入電鍋發酵30分鐘(會澎脹至原來2倍大),再以大火蒸10-12分鐘即完成(外鍋倒入一杯水)。

♥貼心小提醒:
1.饅頭製作時,外皮一定要揉壓到光滑,否則發酵後成品表皮會凹凸不美觀。
2.電鍋蒸饅頭時,一定要用筷子擺放鍋蓋邊留出一個洞孔使蒸氣跑出(不要密封住),以免蒸出饅頭坑坑巴巴地。
3.饅頭排入電鍋時要保留點空間;蒸到一半時掀開一下蒸籠釋放蒸籠內的壓力,以免饅頭縮小、皺皮。
4.揉好麵糰到蒸好最好在1小時內完成以免過度發酵失去彈性。
